Chocolate Chia and Date Mousse

Why can’t desserts be tasty, good for us and so easy to prepare too!
This is a very quick guilt free dessert. You can’t resist this! Well you don’t have to, it’s actually good for you. I do not call this cooking, there’s not much really to it, other than a bit of mixing and blending. I have always laboured over cakes and desserts, so this feels like cheating, but I am happy to cheat because it is truly delicious.

I have been avoiding refined sugar since early last year, after discovering its nasty effects on our bodies. However only lately, I’ve started trying to make desserts that I can enjoy every so often, without feeling guilty about eating it. It is also gluten and dairy free, which suits me perfectly.

Prep time: 15 min
Chill time: minimum 2 hours

Ingredients:
1/4 cup chia seeds
1 1/4 cup almond milk
1/4 cup of pitted dates or 6 Medjool dates
1/4 cup hot water
2 tablespoons of raw cacao
1/2 tea-spoon cinnamon (optional)

In a bowl place the dates and add hot water and let it soak for about 15 min or soft. Alternatively put it in microwave for 20 – 30 seconds.

If you are using a hand held magic wand like me, then place the chia seeds in a large deep bowl, otherwise put it in a blender. Add almond milk, cinnamon, cacao and dates with water. Blend until smooth. Pour in a bowl or glasses and place in fridge for a few hours until really cold. To speed up the chilling process, you can place it for 30 min in the freezer. Serve, with shaved chocolate on top, or your favourite berries. Enjoy.
