This is just so delicious and easy to make. Enjoy it as a refreshing dessert on a hot summer’s day or as a tasty breakfast. It’s sugar, dairy and gluten free, which also qualifies it to be guilt-free. What’s most important though is that it is ridiculously delicious. I wasn’t planning to post a recipe, there’s not much to it, but a few friends requested it and so here it is.
Serves 1 – 2
1 cup frozen mango
1/2 cup frozen raspberries
1/2 cup coconut water
1 table-spoon coconut cream
Thaw mangoes and raspberries for 10 minutes if you have a normal blender, it just makes it easier to blend. Place mangoes in blender with banana and 1/4 cup of coconut water, blend until all smooth. Pour out. Then place raspberries, 1/4 cup of coconut water and coconut cream. Blend until all smooth.
Fill a cup with half the mango mixture, then top with half the raspberry mixture and repeat again. Top up with a strawberry, blueberries, and crushed pistachios and coconut flakes. Consume immediately.
