These are really tasty, and what I love about them is that they are crunchy, chocolaty, gluten, dairy and refined sugar free. I made them this last week twice and both batches have disappeared. You can replace the millet puffs with rice puffs if you like. Hope you get to enjoy making them.
Makes 12 bars
Ingredients
1 cup pitted dates
1/4 cup hot water (optional)
1/4 cup cocoa butter or 12 buttons
3 tbsps raw cocoa powder or 2 tbsps cocoa powder
1/2 cup grounded peanuts
1 tbsps raw coconut oil
1/4 cup amaranth puffs
1/2 cup millet puffs
2 tbsps sunflower seeds
3 table spoons goji berries
3 tbsps pepitas
Add water to dates and let it stand for 30 minutes,alternatively microwave it on high for 20 seconds. If you are using Medjool dates, there is no need for this step. Squeeze water out of dates and blend in blender until soft.
Place cocoa butter in a bowl on top of another bowl with hot water(bain-marie) for a few minutes until it melts. Add coconut oil, date mixture and raw cocoa powder and mix together. You can also place it back in blender and blend for a few minutes. Add all other dry ingredients and mix well.
Flatten mixture and shape into a large square and place in fridge for thirty minutes. Cut into small squares and store in fridge. You can also roll them into balls.
