This mousse or thick smoothie is so simple, and I usually hesitate to post such simple recipes, but when I posted it on my Facebook Page and asked who wants the recipe!! I had a good response. So here it is, enjoy it, it is super tasty, super easy, and super healthy too. I’ve added maca powder and slippery elm bark for their health benefits but they are optional.
Serves 1
1 banana
1/2 cup coconut water
2 tbsps chia seeds
2 medjool pitted dates
2 tbsps raw cacao or 1 Tbsp cacao
1 tsp maca powder (optional)
1 tsp slippery elm bark powder (optional)
Place all ingredients in a blender, and blend on high speed until it is all well combined. Top it up with all your favourite toppings, such as nuts, fruits or coconut flakes. I added raspberry sauce, which I still had it as leftovers from my previous recipe Tapioca, Raspberry and Coconut Pudding. I also topped mine with pistachios, organic coconut flakes and cocoa nibs.
To enjoy it cold in summer, either place in fridge or freeze the banana beforehand.

Lovely! I had Jamie Oliver’s banana chia pot made with milk for breakfast this morning. It was super filling. I’ve ordered some cacao to make this version. Thanks for sharing! Btw if freezing banana 🍌 remember to peel first hahaha!
