I love traditional Lebanese dishes, but every now and then I like to play with the flavours and add a modern twist. In this one I added a light Indian spicy variation to it. Hope you like it
Serves 6
Ingredients:
1 kilo green beans
1 large onion
3 cloves garlic
1/2 tsp chilli powder
1/2 tsp turmeric powder
1/2 tsp cumin powder
1/2 tsp curry powder
1/2 tsp white pepper
1 tsp mustard seeds
1 tsp sea salt or to taste
1 can diced tomatoes
4 tbsps olive oil
1/4 to 1/2 cup of water
Dice onion and pan fry in a pot with 2 tablespoons of olive oil. When it is brown add chopped garlic and all other spices, stir til fragrant about 30 seconds, then add green beans. Stir until well coated with spices and pan fry until they change in colour.
Add tomatoes, 1/4 cup of water and bring to boil. Reduce heat and let it simmer for about 45 min. Add extra water if needed, this will depend on the pot you are using, but don’t let it go runny.
Serve hot or warm with either rice or quinoa or just enjoy it on its own with flat bread.

Nice recipe, Zeina. I sometimes don’t know what to do with my green beans and I just bought one big bag of those nice haricot vert. We’ve been eating them raw but getting tired of them, lol. The traditional recipe is the same but very simple with just onions, garlic and white pepper, or if u have access to Middle Eastern seven spice, then use a teaspoon of it instead of white pepper. Also it is cooked with added lamb cubes, which u pan fry after u had fried your onions. Just for variation sake, trafitionally lamb on the bone such as shoulder or lamb shanks are boiled til tender, then u add meat and some of the broth to the beans and add a tablesppon of tomato paste to canned tomatoes.
