Apricot, Pistachio and Coconut Bliss Balls

 

These are so delicious, I made them this afternoon and decided to share the recipe straight away, so you get to make them and have them ready as Christmas treats. Made with only natural organic ingredients, these are so easy to make. They are completely vegan, refined sugar, dairy and gluten free. I have been experimenting a lot with new recipes lately which are free of lactose and gluten, because I am intolerant to both. Hope you will enjoy them.

Makes 15 bliss balls
Ingredients:

1 cup dried apricots
1/2 cup finely grounded raw cashews
1/4 cup finely grounded raw pistachios
1/4 cup shredded coconut
1 tablespoon coconut oil
1/4 cup hot water

Soak apricots in water for 15 minutes, or microwave for 20 seconds. Sqeeze water well out of them, and blend in blender until they resemble a coarse paste. This will make them easier to blend, alternatively just blend in a food processor. Add nuts, oil and coconut and mix together either manually or quickly in blender again. Take 1 tablespoon full of mixture and roll into a ball. Place in fridge and enjoy.
