These are absolutely delicious. Put them in pita bread, a burger bun, or on mini skewers and serve them as appetizers at parties. Use your imagination and serve them any way you like, with salads or in a roll with lettuce cucumber and tomatoes. If you can’t have dairy products they taste just as delicious without the feta cheese. In one of the photos these patties are served on a gluten and yeast free naan bread that I made at home.

Makes approx 12 patties
500 g lean chicken mince
1/4 cup uncooked quinoa
2 sprigs shallots/spring onions
1/4 cup chopped fresh coriander
100 g crumbled feta
2 Tablespoons plain flour (I use gluten free flour)
1 tea-spoon sea salt
1/4 tea-spoon cracked black pepper
1/4 tea-spoon chilli (optional)
olive oil or grape-seed oil for pan-frying
Avocado and Tomato Salsa:
2 ripe Avocados
1 large firm tomato
1 sprig shallots
2 Tablespoons coriander
1/2 tea-spoon sea salt
juice of 1/2 lemon
To make Chicken Patties:
Rinse quinoa really well and place in either a pot on top of stove or microwave with a cup of water and bring to boil and simmer. Cook for about 15 minutes or 10 minutes on high in microwave. In the meantime, place chicken mince in a bowl. Wash coriander and shallots, chop finely and add to chicken mince. Add salt, pepper, flour and feta. Drain and rinse cooked quinoa under cold water. Squeeze out excess water and place on top of chicken mince. Mix all ingredients really well. Place a bowl of cold water on the side. Wet your hands and get two heaped tablespoons of mixture and form into a 1 cm thick patties (photo below). Place a tiny drizzle of oil in a non-stick frying pan and pan fry patties on medium heat. They will cook in a few minutes. Make sure they are golden before you turn to other side and test to make sure they are cooked right through.
To make Avocado and tomato salsa.
Peel and dice avocado. Place in a bowl, dice tomatoes and add on top. Add salt, chopped shallots and coriander, sea salt and lemon juice and mix together.
To serve, place on a naan bread (optional) after heating it in oven or in a pan, top with a chicken patty, put a heaped tablespoon of salsa on top, repeat with patty and salsa and serve immediately. It is delicious with a green or garden salad on the side.
